Pinterest Pick: Balsamic Glazed Steak Rolls

I t all started when Nate, in a post-Christmas haze, declared he was going carb-free.   As a work-from home couple, we’ve discovered we enjoy cooking together.  The key to working and living in the same space is lots of grace and lots of company.   Great meals then become a must especially when bread won’t be making an appearance.

This Pinterest find, artfully captured by Noreen at Picture the Recipe is a remake of Pan Seared Steak Roll’s found in Martin Chan’s China via Steamy Kitchen.  I love to see how Noreen remade this with what she had on hand.  I believe cooking becomes art when you make it your own. Our family loved this one so much I bought Chan’s cookbook.  Stay tuned for Asian inspired recipes.

  • Nate travels light, especially with vacation expectations. People watching on a patio, a slow day at the beach, watching his children giggle and experience the world. It's about all he asks for-- this year he wondered out loud if we could catch part of the Tour De France. Thanks @katetravels2 for the great setup. A beach & the tour! A match made in heaven for family travel.
The kids stamina has really increased, they hiked a couple of kilometers in Marseille and enjoyed watching the bikes but they also loved giving daddy an experience after receiving so many great ones in return. For Christmas years ago, Nate took Sophia (three at the time) through the Musee D'Orsay so I could linger and enjoy the Monet's, Mattise and Renoir's.
One of my favorite parts of family travel is when we're able to give the gift of delight to each other. We will all walk a bit longer, look a bit harder, wait in the heat just so this person can have that smile, the story they'll never forget. It's not every day and it can be as simple as waiting up for the bumper cars or hunting for endives in the market. It's a language of love that we're discovering together.

  • So we wander into our villages festival. We've been invited warmly and hear they have a running of the bulls night. We were not prepared. . . Nothing bonds you to the French people like a bull charging your piece of fence. We had mother's holding onto our kids belt loops pulling them away from the bull, we even have a coffee date set up with a local family after a night of thrills with the bulls. Here's to new friends and epic adventures! P.S. I had no idea bulls actually stomped their foot that way! Toro bull! (Watch till the end)

  • Had a wonderful evening of tabling, serving with and worshiping alongside these sweet people. It's always priceless to me when our paths can cross and people you've had in your home open their lives, work and hearts to you for a moment. Thank you ladies, @epolglase @katetravels2 for the special role you play in this place. What a privilege it is to see you thriving in your calling.

  • In the process of sculpting the words to fit our journey, our perspective is shaped. By placing the moment into a narrative, I witness my response. And as a person of faith, I discover anew the glory of God in personal ways. My words peeling back the layers of time, emotion, and spirit. The paragraphs bear witness to life in three dimensions. The chapters give my life understanding and substance.

This month Fathom is looking at stories this month in their latest issue, how we share them, tell them, receive them. It's an honor to participate in this conversation. As I've crossed through trauma, travel and the journey of faith, stories have been a universal language, the place where heart, mind and spirit intersect.
Thank you to the @fathom_mag crew for their focus on this powerful element of human expression.

  • Happy Bastille Day! Far from home and separated by language we find ourselves crawling into books. Nate and I both remember reading voraciously in the lonely days that creep into global adventure. It's interesting that years later we look on these memories fondly and have smiled knowingly as our children unravel from their normal and fall into the welcome arms of a familiar story. Sophia has been trying to finish the second Harry Potter for months but couldn't get past chapter four. Out here she finished it in four days. We still have video games and Netflix (things I would have killed for as a kid in Africa) and have been watching fire works and cliff jumping but there seems to be more space in our days to read. I'll admit I've been a little nervous to spend so many days away from beloved friends and family but every day we're rediscovering each other and the simple pleasures that stimulate the soul. Every book takes me back to a place.Do you remember what you read and where? Got any recommendations? . #readtome #fortheloveofreading #fallintoagoodbook #whatwillireadnext #adventuresinreading #thespacebetweenthepages #thegreatescape #slowtravel #armchairadventurer #traveltogther #travelwithkids #ndjerareoujourney #comealongwithme #aroundtheworld #bastilleday #france #travelreading #adventurestories #simplesabattical
  • Mouthwatering adventures. I find exploring the world through food to be one of the most inclusive ways to draw in the whole family. After noticing squash blossoms at the market in Monte Carlo we went on a menu scavenger hunt in Nice and discovered these made into beignets. They were delicious but slightly intimidating to try in a borrowed kitchen. Anyone have a simpler suggestion? We started up our French BBQ last night bellows and all. The grilled zucchini was a hit, the eggplant didn't go over as well. Our host left us all the fixings for homemade pizza and Endives baked with ham & béchamel sauce. We will grab the endives the next time we go to the market. I may have had to google what an endive looked like but the recipe looks perfect for the whole family to get involved and get a local taste of France.
